Low Carb Diets Have Insufficient Fiber

Posted on March 26th, 2007.

It is considered that because fiber IS carbohydrate, a low carb diet has to be low in fiber. But since fiber stays undigested (actually it reduces the influence of other carbohydrates on blood sugar), it is allowed on low carb diets. Lots of low carb foods contain high levels of fiber, and on diets that allowe carb counting, fiber does not enter into the calculation.
